This is my hubby and I celebrating each other in one of our engagement photos. I got pretty darn sick pretty freaking quick after we met. Adrien stuck by my side through it all, and it's made such a huge difference ♡. He changed his diet with me (we live in a completely gluten free, plantiful household), he supported me when I was too sick to work... or do much of anything. He's there for appointments, tests and more. And he cheers me on, every day, encouraging me on this crazy awesome wellness journey.

And it's not just him there with me. It's my family, my friends, all the wonderful people I've met here... When you do your best to surround yourself with good, loving, supportive people you're also supporting your well-being. You deserve that kind of love and support in your corner. We all do! And we truly need it, especially when times get tough. 
To my hubby - happy birthday! I couldn't have found my way to remission without you. And to everyone else, I am so, so grateful for all of your kindness and support. I hope you have a wonderful tribe too. You truly deserve it. Health and love

Happy International Chef Day!!! My gift to you is this healthy recipe of 
Quinoa Fried Rice. ------- TOTAL TIME: 15 MINS
PREP TIME: 5 MINS
COOK TIME: 10 MINS

Looking for a quick meal that’s under 15 minutes and packs a nutritional punch? Then you need to try the quinoa fried rice. I love this recipe because it can be easily adapted to suit your current pantry list and dietary style!

Ingredients
● 2 Tablespoons of Grapeseed oil or coconut oil
●1 small onions diced
● 2 Cloves of garlic
● 2 cups of cooked quinoa
● 3 carrots grated
● ¾ red pepper diced
● 3 Eggs
● 2 cups of broccoli
● Tamari or Soy sauce
● Scallions (optional)
● Protein (optional)
● Black pepper  Equipment
● Sautee pan
● Whisk or spatula
● Serving spoon  Directions
1. Heat 1 tablespoon of oil in a large skillet over medium-high heat.
2. Add eggs, and cook until scrambled, stirring occasionally. Remove scrambled egg, and transfer to a separate plate.
3. Add an additional 1 tablespoon oil to the pan and heat add onions, salt and sweat.
4. After onions are translucent add garlic for a minute and add quinoa.
5. Sautee for about 5 minutes add tamari or soy sauce, carrots and broccoli and red pepper are soft.
6.  Continue stirring for an additional 3 minutes to fry the rice.
7. Add in the eggs, scallions, stir and remove from heat.

Serve warm.
